It is in 1971 that we registered in the DOC register the rows of white grapes we had with the denomination of Trebbiano, grapes that we actually called “Uva Passera”; then we discovered that the official name was “Passerina”, however belonging to the Trebbiani family as confirmed by the ampelographers and today also by the DNA analyzes.
The grapes were pressed, cold macerated, fermented at low temperatures.
