Notes:
Passerina grape is the native Trebbiano variety of our province. It was traditionally cultivated in the areas closest to the sea and has the typical characteristic of the Trebbiani of being able to make large productions; naturally with a non-intensive breeding and an adequate pruning the production is limited and then very interesting wines are obtained.
We also have the Passerina for the
Trebbiano bottle grown in a cooler and more clayey area but for this wine the grapes are grown in a higher parcel with a soil structure with more sand and gravel.
The processing is the classic one of white wines all in steel; crushing and destemming, cryomaceration, fermentation at low temperatures, sur lie refinement, bottling.
