About this wine

Appellation: Prosecco Rosé DOC

Production area and vineyards: Vineyards located in the province of Treviso, with predominantly calcareous soils, with large blocks of slabs that cross the ground transversely; Caneva vineyards (from which the Pinot Noir and part of the Glera originate) with welldrained clayey calcareous soil.

Grape variety: 87% Glera, 13% Pinot Nero Vinification technique: Harvest around mid-September. The grapes are softly pressed. The must of Glera is brought to low temperatures and cryomacerated; Pinot Noir is vinified in red, with skin maceration to extract the color and fermentation in a steel tank. The two wines undergo the second alcoholic fermentation together and are transformed into sparkling wine using the charmat method, with a second fermentation of about 60 days.

Tasting notes: Pale pink color, with fine, filamentous, dense and persistent bubbles. Floral scent of acacia flowers, wisteria and wildflowers, notes of apple and raspberry. Sustained acidity, unmistakable freshness and caressing and silky bubbles; very precise and clear finish, enhanced by the low dosage.

Food pairings: Excellent as an aperitif and with shellfish, oysters, grilled scampi, various kinds of fish, vegetable risotto and other light first courses.
