Langhe Nebbiolo 2018 - Saffirio

Josetta Saffirio's Langhe Nebbiolo DOC is an interesting blend of Nebbiolo, the main grape of the area, and Merlot, a noble Bordeaux grape. The two grapes do not ripen at the same time, therefore the vinification takes place separately. The grapes, harvested by hand, are pressed and then de-stemmed. The must ferments at a controlled temperature in temperature-controlled tanks for about 8-10 days. The two wines thus obtained, after having completed the malolactic fermentation, mature separately in wooden barrels for about 12 months. At the end of the refinement, the two wines are blended and then bottled.
